my version of nasi kuning (yellow rice)

this is a traditional yellow rice or nasi kuning in my language. my mom made this during birthdays and its a must even its just a tiny bit of rice.

i made it more tasty by adding more flavour to it.

ing:

- 1 cup ordinary white rice
- 1/2 of white onions.please do not use red onions..its just doesnt fit.
- 4 clove of garlic
- 6 pcs of shallots
- 2 1/2 cups of chicken stock
- 2 salam leaves or bay leaves.
- 2 stick of lemongrass
- 1 tsp salt
- 1 tsp tumeric powder

how to :

- crush the onions , garlic and shallots all together and sautee in an ordinary oil.please do not use extra virgin olive oil , it will ruin the flavour.
- on the same pot , dunk the rice while adding the chicken stock and tumeric powder.
- bruised lemongrass and add to the pot alongside salam leaves.leave it without lid on and stirr occasionally.
- once the stock become reduce , taste the rice , if its still a bit hard , add 1 more cup of chicken stock and add the salt.
- as soon as the stock reduces , kill the heat and straight away move the rice to a rice steamer. and steam away till soft.
- to make it easy , rice cooker will do. same measures.

Chicken Asam Padeh

no pictures this time and i am sooo glad to be back!

for today's menu i cooked chicken in spicy and sour flavour.its a traditional recipe from indonesia.one of the many2 variety of taste from Indonesia.

ingr :

1 whole chicken (i cut into 12 pcs)
15 shallots
5 garlic
5 chilli (the number is depend on how spicy do u want it)
2 tumeric leaves
2 cm galangal
1 cm ginger
2 sticks of lemon grass
4 kafir lime leaves
2 tomatoes
3 pcs of tamarind (actually what the original recipe is using "asam kandis" but u can replace it with tamarind if u can not find this specific tamarind kind)
water

how to:
-fried the chicken in the pot till brown then remove , put aside.
-pound garlic , chilli and shallots till evenly crushed then sauteed till fragrant enough.
-dunk the tumeric leaves , galangal (lightly bruised) , ginger (bruised) , lemon grass (take the white part and bruised) and kafir lime leaves , stirr till all of this add more fragrant.
-add the chicken , stirr and pour water (make sure the chicken is drowning in the water) in then lid on.
-after 6 minutes , add wedges of tomatoes and salt.
-lid on till slightly simmer...water start to reduce and if u poke the chicken it comes off easily.then u know its done..

i like to eat them in a hot rice , with the soup from the chicken! i usually dont eat the chicken..because the soup itself is damn good! :)

try it!
u'll get the flavour of indonesia that instant!

simple cheese sauce


ok!

something popped in my head...what about mixing chicken stock ( homemade or store bought will do.. ) with some cheese?
well...i did!
i use (happen to keep some at home) chicken stock and smoke cheese (i kept pre-packed cheese slices from KRAFT and smoke cheese)...
i didnt make it thick sauce , cause i'm going for the soupy kinda bits.
my spaghetti is aldente , transfer it to a wok with little heat then turn off the heat and plunked cheesy sauce in and mixed!
no need for salt...pepper yes.add some chilli....finely chopped.
its best to eat hot..

when u add the cheese , make sure the stock is hot so cheese melts away.when all cheese melts and it slowly thicken (not to thick though..) then u know its done.

Smoke away spaghetti...

sorry for no pictures....i forgot to take them!
i even forgot to give the cheese.....:(

this is an easy weezy spaghetti.everything is smoked!:))
boil up some spaghetti.saute store bought smoke chicken , onions , smoke chicken sausage (again..store bought!) , add chilli if you like.
once the spaghetti's done...tossed them all together with the saute everything! mixed well...

lastly....you should try add cheese.i prefer smoke cheese..tastes like heaven!

come to think of...hmmm..i owe someone this food! ;p

note : some of the recipes might not be with pictures since i'm not always that handy with cooking and cameras..but i'll do my best.

Potato Spring Roll





ooops!! wrong orders......:)
i often made this for my family for a snack or just eat it with rice..
as for the spring roll itself , any kind of filling you want to use , have it your taste!
ingr.:
- big spring roll skin store bought.
(note : i dont feel like making it..so i bought them!)
- some potato ( 2 or 3 ) , diced them to little mini cubes.
- mince chicken..i have some leftovers at home...
- onions (prefer the ordinary onions...)
- salt and pepper
- 1 egg to stick the spring roll , mixed.
steps :
- put some oil , saute onions till soft but not brown them.add the potato...cook all the way till half done.
- add chicken and keep stirring so no lumpy chicken....
- add salt and pepper to taste.cooked all the way through.....
- set aside till cool with temperature room.....
- prepare the skin in a flat base...take a scoop (this is depends on how much you want..) , rolled them nicely.however you like....just be sure to stick them together at the end with the egg.
- heat up some oil and fried the spring roll till golden brown.
note :
while cooking the filling , to add some flavour try add some chicken stock ( it help soften the potatoes too ).also you can add an egg and scrambled them as soon as possible..

why on english?

if u wonder why everything on english?
and the english sucks...:))

its because i wanted everybody to know and understand the food.especially when i cook Indonesian food.
Indonesian food is a cultural food...i always miss this home cooking because i always think nothing beats Indonesia in a matter of taste , spices etc.

if i add some fancy schmansy food like the pastas etc. its only to add some variety...
forgive if i'm not doing it right..but its my food , my cooks and most surely , my blog.
